Cupcakes For Steve's 21st

Vanilla cupcakes with vanilla and chocolate frosting (my first cupcakes from scratch!). Recipes for both cupcakes and frosting below. I'd make these again. Pretty easy. The frosting was really sweet, but I guess frosting is pretty much just sugar (and butter). The chocolate one tasted better to me. The cake wasn't really moist, but it wasn't too dry either, and it wasn't too sweet.

After adding about 2 tablespoons of unsweetened chocolate powder to the rest (I added choc powder after icing three of the cupcakes with the plain vanilla frosting):

RECIPE

White cake (original recipe here):

* 1 cup white sugar
* 1/2 cup butter
* 2 eggs
* 2 teaspoons vanilla extract
* 1 1/2 cups all-purpose flour
* 1 3/4 teaspoons baking powder
* 1/2 cup milk

  1. Preheat oven to 350 degrees F. Line a muffin pan with paper liners.
  2. In a medium bowl, cream together the sugar and butter. Beat in the eggs, one at a time, and then stir in the vanilla. Combine flour and baking powder, add to the creamed mixture and mix well. Stir in the milk until batter is smooth. Spoon batter into the prepared pan.
  3. Bake 20 to 25 minutes. Cake is done when it springs back to the touch.


Frosting (original recipe here). Only problem was that this recipe made too much for the 12 cupcakes I made.


* 2 cups sifted confectioners' sugar (I didn’t sift it)
* 1/2 cup butter
* 1 teaspoon vanilla extract
* 1 1/2 tablespoons milk (I used non-fat)
* 2 (or 3) tablespoons cocoa powder (optional)

  1. Cream sugar, butter and vanilla. Add a small amount of milk (1 to 2 tablespoons). Add cocoa if desired and beat until fluffy. If frosting is too sweet add a little more milk.
